Blogs, Brews and Belly Laughs II

Andrew AKA BenSpark is doing a really neat thing for a good cause. Please follow the link to his very well written blog and learn how to help, contribute, donate or attend the function. If you live in Maine attending the event should not be a problem. His first get together or tweetups as we like to call them on Twitter was a huge success. I wish Texas wasn't so far from Maine. It would have been a blast.

Tuna Salad Rollups

serves 4

1/4 cup light Miracle Whip salad dressing
2 Tbsp chopped green onions
1/2 tsp dill
Pepper to taste
1 6 1/2 oz can of tuna packed in water, drained
3/4 cup 2% low fat milk shredded cheddar cheese
1 small tomato, seeded and cut in small pieces
4 whole wheat tortillas

Stir together salad dressing, onions, dill and pepper. Gently stir in tuna, cheese and tomato. Spoon tuna mixture onto the edge of each tortilla, roll, hold together with toothpick, cut in half and serve.

Cowboy Stew

serves 4

1 pound low fat ground sirloin
1/2 cup chopped onion
1 16 oz can of Green Giant mixed vegetables
2 cans tomato sauce
1 package Uncle Ben's spanish rice (90 seconds), cooked
1 17 oz can cream corn

Brown beef and onions in a large pot. Drain meat and add remaining ingredients without draining the mixed vegetables. Cover and simmer one hour.
